Chan Chut is a Chinese immigrant and traveling worker in both the United States and Mexico.
Events of Red Dead Redemption
Chan Chut can be found working at El Matadero in the back room of the slaughterhouse tending to the meat. Whenever he's on a break, he can be found behind the slaughterhouse either smoking opium or sitting on a stool. At nighttime, he will stay behind the slaughterhouse by the campfire, also smoking opium or sitting on a stool.
He can also be found in Pacific Union Railroad Camp, he does a variety of odd jobs, such as repairing railroad tracks, cutting wooden 2x4's and loading supplies at the warehouse. He can sometimes be seen speaking on the phone inside the rail house. Whenever he's on a break, he will either sit on a bench or sit by the table have a drink. When it's nighttime, he will sleep inside one of the tents.
He also commonly appears in Blackwater on horseback.
Outside of this, he also be found in various locations in New Austin working as a stagecoach driver.

Furthermore, his outfit is the same as Chu Fuk Choi's and Zhou's. However, Chu and Zhou's is recolored to black.
During evenings in El Matadero, instead of joining his fellow immigrants at their tent city near the edge of town, Chan will instead smoke opium at a small campsite just behind the slaughterhouse, hinting that he may be a loner. When driving his stagecoach this is further proven by his quotes as he wishes the player to stay quiet and when they arrive at their destination, he will sternly tell them to leave and assume they ruined his coach.
Like most Chinese characters in the game, Chan Chut speaks in the Cantonese dialect of Chinese, hinting that his place of origin is in Guangdong province.
His fluency in English appears to be pretty good.
Chan Chut can be translated as "陈七" (meaning seven in Chinese), while the word "陈" (Chan) is a fairly common family name in China. It probably means he's the seventh son in his family.
Speaking of family, based on a quote, his family has been around for multiple generations.
Despite wearing a gun holster, he doesn't have a handgun and will run away if threatened. He will however pick up a gun that's lying on the ground if there's a gunfight happening.
Alternatively, he may pull out one of his trusty rifles in a gunfight and start shooting at the player.
Like some other characters in the game, Chan Chut had a different name before the game update. His beta name was "Thao Long".
